They last a LONG time refrigerated and unopened.

but when i open them, they’re like avocados - fine, then suddenly NOT FINE

Partial fail this morning… The store only had one block of cream cheese, so I had to get 2 blocks of neufchatel cheese (in order to get the 3 for $5 special).

I’m assuming I can still make peirogi filling with neufchatel cheese??

Yes, but note Neufchâtel is lower in fat and higher in moisture, so filing will be softer and a bit less rich.

I just finished making up 3 dozen pierogies.

The two blocks of neufchatel cheese, a can of spinach, 1/2 sauteed onion and some shredded cheddar cheese made up the filling for these 36 pierogies. Some will be dinner tonight and the rest will be frozen for later meals.

I guess I’ll find out later tonight if this was a fail or a win…

Congratulations from someone who has been making them for 50 years, your first try is amazing. 8m going to be spending almost all day tomorrow making varenyky (thats what we call them in Ukrainian).

I have been taught that “pirogi” have meat, and “vareniki” are meatless. Am I close?

Yes, you are right. Perishky are buns with a filling usually meat or cabbage and are baked.

In Poland, pierogi are both meatless and meat-filled. When I lived there, I saw far more without meat than with. Meat was expensive, though.
