Did you eat them already? Otherwise I’d try warming the sauce and submerging the meat (adding liquid if needed), and let the drier parts reabsorb some of the liquid at low heat or overnight. Use a small pot or container that just about fits the meat and can be covered with a lid or foil.
maybe could be turned into Sunday gravy, depending on the seasoning.

I was in TJ’s today and one grocery bag was $43.xx. i said something like wow and the clerk said I know….yada, yada, wtf… In any case this got me thinking. My dad use to estimate the cost of grocery trip by the bag. It was a little game he played and he’d also try to add up the cost while waiting. I think in the 90s he used $10 bucks a bag. More recently before the pandemic I recall $20-ish or so per bag, depending on what. Welp, we’re now at $40 a bag…and no meat. The only protein were eggs. I know it’s anecdotal but that’s where we are, and TJ’s is always reasonable in comparison. Oh yeah, went today because no way I’m going near a grocery store tomorrow or Wednesday.
We just bought 4 large broccoli crowns from Aldi for over $8! WTH.

I’d like to make something with boneless shortribs of beef but can’t find them in any of our stores. They’re probably too spendy given bone-in are approaching $12/#.
Check Hmart or other Asian stores (on Instacart). Chuck roast is easier to find and works pretty well (and usually cheaper) for similar preps.
Boneless Skinless Chicken Breast on sale (again) starting tomorrow – 99 cents/pound (limit 8 pounds) and 5 pound bag of potatoes for 59 cents (limit 2). No one is complaining about chicken, yet and I don’t see any feathers growing on any of us – so more chicken dishes in the near future.
I can shred the chicken for Sunshine; she is getting better each day and is able to tolerate different soft foods.
Personally, I’m glad to have something/anything to make dinner out of.
Perhaps, I could make a soft crust white pizza with shredded chicken and onion??
How about a tamale pie with shredded chicken? Bit softer than pizza crust for the moment.
Chile verde or other soupy / stewy dish (chicken pot pie soup?) with added beans would stretch the chicken further and be tasty too.
Mashed potatoes to top something would also be nice — Iike a shepherds pie.

I think a chicken pot pie filling topped with mashed potatoes would be delicious. Or make it soupy and add chunks of potatoes inside. Now I want to eat some of this!

Yes, I’ll freeze some of the chicken I pick up tomorrow. I’m still using the brats I picked up and froze.

SCORE!! OMG, I can’t believe my luck this morning. After getting my chicken breasts and potatoes, I found 5 pounds of 80/20 ground beef for $1.80/pound (on clearance). Its been forever since I’ve seen ground beef on clearance. Sunshine was quite happy with my find and wants a nice Hamburger Steak made with real hamburger (instead of my doctored up ground turkey) I’m so excited!!
Maybe its Karma, maybe its luck – I’ll take it either way!!

Sunshine also asked about tacos (hard shell). I’ll wait until all or most of the fixings go on sale and make some tacos. The ground beef with taco seasoning really makes the taco taste great!

In the absence of beef, this tofu is pretty great, very “meaty”. I’ve stuck with the recipe, but added taco seasonings. Per notes, have crumbled it by hand, mixed oil/seasonings/tofu in a bowl - less fussy!
Makes a lot, keeps/freezes well.
