I don’t can, although my mother did all throughout my childhood and never taught me a thing! All I can tell you is that peppers freeze very nicely. I do it all the time with store bought pepper deals I don’t think I’ll use in time. I cut them up also and deseed them before putting them in a ziploc freezer bag. I use a straw to suck the air out before sealing.
