I finally made a decent version of this dish by combining a couple of recipes.
I’d made it before and it came out, well, kinda flat tasting.
This shot I tried a Tyler Florence recipe plus some ideas from another.
Basically it was
Medium tofu, pulsed in the food chopper
1/2 cup minced green onion
1/2 tsp turmeric
Dijon mustard
Salt
Pepper
Mayo- I didn’t actually use the vegan type , I’m not vegan
Dill weed
Nutritional yeast
The nutritional yeast really added to the flavour.
I let it sit in the fridge for an hour before eating.
I was really happy with the results!
Thanks for sharing! I haven’t made tofu “egg” salad in years. This is going on my “to do” list. I don’t quite remember how I made it back then but I think it was pretty similar to yours.
I may have added some grated onion and some finely minced celery or celery salt and a squeeze or two of lemon. I loved it on rye bread with romaine lettuce and some sliced red onion and tomato if in season.
