Thinly Sliced Beef

My Wegman’s sometimes has rib eye cut for shabu shabu. I think it makes fabulous cheesesteaks. They have both ribeye and “shaved beef.” I get the rib eye. They have other meats as well. The only time I’ve ever had actual shabu shabu is in restaurants.

I’m not sure I’ve ever had true shabu shabu. I’ve enjoyed a Thai broth hotpot, though.

For me, the wealth of browning is the biggest deal. They may be inauthentic, but cheesesteaks and French dips both should have some.

How about Lomo Saltado? “Thin” might be too thin for that.

If you freeze or semi-freeze your meat, it’s quite easy to slice thin

Before there was supermarket sushi, when dinosaurs ruled the earth, there was a Japanese restaurant on Georgia Ave in D.C. called Sakura. Most of the clientele and staff were Japanese. I would go with a friend who’d just traveled to Japan. Had my first sushi there, too. And shabu shabu. And a whole lot of other surprising things. There was also an Asian grocery in the same block where you could stock up on instant noodle bowls that were far more elaborate than anything I’ve ever seen since.
