I read this too (don’t remember where) - I guess I can see it for a commercial kitchen but it is hard to wrap my head around.
The first thing I’ve done in my homes over the years is vent the hood to the outside. I can’t imagine not having a vented hood in my house. Maybe I need to improve my cooking habits
I got a non-vented hood on my microwave a few years ago. It blows the stovetop fumes through a lame pair of filters and then right into my face as I stand at the oven. I really miss my old kitchens where there was an evacuator fan that blew the smoke out of my house, not in my face.
So going without a hood sounds kind of familiar. I do not cook steaks inside anymore, except for a two or three minute finish in a pre-heated oven/cast iron skillet. I do bake sweet potatoes in the oven still but they can be problematic with a Samsung microwave/hood.
not really. some of the statements in the article just don’t hold up to reality.
like cooking in an electric kitchen not creating fumes and grease . . .

so sorry - but it is the temperature needed to sear/whatever - and whether that temperature is generated from an electric/induction element or a gas or a coal or a wood element . . .
oh…! but he achieves that same result in a very hot oven . . . which is vented? or not?
where do the ‘not vented’ smoke and grease stuff go?
it’s like EVs - some people rave, some people find them not so hot…
Now that I have a convection countertop I’m using it for 99% of everything, but we have a hood, and I also can’t imagine a commercial kitchen without one. I guess I can imagine not needing to permit as much if you don’t have a big grill and fire? But… yeah. Seems a bit overblown?
And EVs are great and those who don’t realize it simply haven’t tried em
