Pistachio loaf from the Hummingbird Bakery Cake Days cookbook. I adapted the recipe a bit, reducing the butter and sugar, reducing an egg, adding rosewater, replacing part of the flour with semolina and leaving out the glaze. Received this as part of a Christmas present package.
First time trying a ‘Pistachio Panettone’ from a Haute Couture Fashion House - Dolce & Gabbana!
Surprisingly delightful to eat. Very fragrant and aromatic. Super airy, fluffy and light. Most of all not overly sweet! Even came with a special butter knife to spread the Pistachio Cream…Super cool!

Next batch of delightful pistachio cookies my PIC baked today. He added some pistachio cream to them this time around, which made them even MOAR pistachio-y and added a little moistness.
