oh wow. I would have retreated with the kids in a different room with a glass of wine. I just can’t understand this, at all. My crostini will be better than your crostini and my pistachio pesto is just fantastic!

There are some occasions when you just have to walk away and avoid conflict, because the boundary-crossing is beyond believable. I hope no one tried to solicit your advice!

At the last minute, I decided to make our house stuffing (very bland white-bread stuffing) and put it in the cavity of the turkey breast. Then I had to figure out how to close it, so I hunted down a big hat needle and some dental floss. Then I had to figure out how to knot the end of the floss, which didn’t work, so I tied a half-size wooden skewer to the end and used that as a kind of stopper. And thus I trussed the breast. Five bucks says it doesn’t hold, and the stuffing flops out. We’ll see.

Extremely amateur.

OTOH, I tasted my pumpkin roll and it’s yummy!

This is the kind of story that makes me thankful for a quiet Tday with just me, DH and the cats. I had apple pie for breakfast and we’ve just been lounging around, drinking mimosas and noshing on crab cakes and olive balls, ever since. Targeting dinner at 7ish, or whenever I get around to it!

I’ve largely been ignoring this thread since it’s only going to be Mrs. ricepad and me (Spawns have other plans), but I decided to try something new: pan de cristal, using the King Arthur’s recipe. To go with it, I’m making a pretty basic chicken cacciatore but adding some cubed eggplant (last of the summer’s harvests) over polenta. I sure hope the glass bread turns out!

And plated, with stuffing and chanterelles in brown gravy. I thought I had some green beans, but they got lost in the fridge.

I stuffed our turkey breast and had the same open-cavity dilemma. Decided to simply foil-over the stuffed cavity and planned to place breast upright in the roaster. But ended up with breast on its side to be able to put the lid on the roaster. Stuffing that expanded and fell out fell on the foil. All good.

Our first time roasting a partial bird and I’d do this again. I was happily surprised to see most of the thigh meat was still included. Our turkey, too, was ready about 20 - 30 minutes early.

What is glass bread?

Pan de cristal is also known as glass bread. It’s a super high hydration bread: 100%! Start with 500g of bread flour and 500ml water. Some yeast, some salt, and fold, wait, fold, wait, fold, wait…bake.

Mine still isn’t done which is not ideal. Internal temp at 140.

Just increased the oven temp to 375.

Meal for two plus 1 guest just before noon… A couple meals worth of the leftovers went home with the guest and we’ll still be enjoying leftovers for several days. Some turkey will get frozen, and the turkey carcass is already bagged and in stasis (freezer) until I decide whether this is the year to finally make broth/soup. We usually skip mashed potatoes with so many other carbs in the meal but when I offered mashed potatoes to our guest his eyes lit up – I was glad I’d bought a tray of microwavable mashed potatoes for just such an easy option.

I inherited the beautiful glass/polished stainless large serving tray 10 years ago, and am happy I finally was able to use it. Nibbles/Appetizers: spanakopita, stuffing balls, cheese ball, crackers, feta/red pepper dip, cashews. Relish tray: carrots, tomatoes, black olives, green olives, ranch dip. Sides: red grapes, devilled eggs, roasted cubed sweet potatoes, (commercial) mashed potatoes, buttery almond stuffing, mushroom gravy, orange cranberry sauce, canned cranberry sauce.

Amazing that the deviled eggs are still there. At any party I’ve been to, they’re gone before they even reach the table.

I’m not a stuffing fan, but I put a lemon, apple, and onion in the cavity. Really good!
