Thank you… Yes, I have a feeling Sunshine is going to request duck, again.
I do think I’ll attempt to find a proper roasting pan with wire rack. My makeshift set up worked but was less than ideal.

Also, if one doesn’t mind frozen, Aldi (if one is near enough for @Desert-Dan) has them about once a quarter or so lately, at prices that seem pretty cheap to me. I buy 3 or 5 if I have enough freezer space. Sometimes even when I don’t.

I think some people are clumsy when trying to be complimentary to one person, and don’t realize that making comparisons like that always put someone down.

My aunt’s husband had an uncle like that. Kind of a weird mathematical genius, but he bounced from uni to uni, never making more than (untenured) assistant professor. I saw him 3 Thanksgivings in a row when I was stationed close enough to my Aunt to do Thanksgiving there, and each time he unloaded some faux pas, while thinking he was being nice. Usually more than one. But in talking with him, he really seemed a fairly kind person. Just not very socially graced.

They just opened an Aldi in Phoenix, about 45 minutes away from me… (kind of far) but worth going if I can get a duck at a reasonable price.

I have 2 sizes of All Clad SS Roasting pans, I think they’ll last forever. I should have gotten good ones like these when I was much younger.

Easy clean up especially if you soak in sink overnight.

I had three joint replacements at a very well-known and highly regarded hospital in Boston.

The food was terrible.

Yeah, the person in question is his MIL who is the 2nd primary caregiver for his child (after his wife, before him), so it is really against his own best interests to put her down even unintentionally :woman_facepalming:t2: :rofl:

My personal Thanksgiving.

Scooby Snacks of Manchego, membrillo/quince paste, and Marcona almonds, dried apricots, grapes, proscuitto, and creamy Havarti on Triscuit crackers.

Dinner was roasted turkey breast, gravy, mashed sour creamy potatoes, glazed carrots, buttered green beans and cranberry-orange relish.

Wine was Stag’s Leap Cellars Karia Chardonnay. Dessert will be the last slice of the apple pie I made for Thanksgiving. (Full pie pic upthread)

My last visit overnight was very satisfactory in the food service. Like I would have made at home; red pepper hummus with fresh veggies, a hand crafted ham and cheese sami and a fresh fruit cup of fruit I wouldn’t usually purchase in November. I haven’t seen the bill yet, but a ‘visitor’s tray’ for B & L was $5, dinner $7 all items free choice on the menu. Vegan, vegetarian , GF and allergy and sensitivities all recognized.

I remember the 1-1.5 g Na diets as being the strictest, 2 g moderate and 3g and NAS numbers, the ’ regular’ diet. Most everything I eat out of the house is too salty to my taste. I’ve been following a low sodium diet for 33 years. I noticed on this recent visit when I finally got to eat (after 96 freakin’ hours!) , EVERYTHING tasted overly salty, even the whole grain bread.

I remember great grandma soaking cheesecloth in butter and laying it on the turkey in the big old enamel ware turkey roaster. Does anyone do that anymore?

I don’t use an enamel roaster but I do like the cheesecloth trick. In SF and Marin there used to be an upscale market, long before Whole Foods appeared, called Petrini ; I still have their original flyer for how to roast a turkey. Involves damp cheesecloth soaked in melted butter, later white wine, later brandy.

For Christmas I’m going to combine parts of this one with the “low and slow” method.

I’ll post if anyone is interested.

My father used to do that, albeit in a roasting pan, no fancy roaster.
