Raw asparagus salad (with white asparagus) is quite popular in Germany

Yes, indeed - you can eat white asparagus raw, eg if you shave off trimmings or use the tips only. But I haven’t seen anywhere whole raw white asparagus on a menu. In Germany, the salad has whole asparagus?

Green asparagus yes, but that’s because green asparagus are also often eaten young and hence they will be thinner. Green asparagus often then don’t even need to be peeled.

White asparagus in Europe are often priced if they are a bit thicker. They also tend to be grown outside, in full soil, so a farmer tend to let them grow older. I guess harvesting them younger will be less efficient for the farmer as asparagus cannot be grown outside for a long time, maybe three months a year.

I have an asparagus farmer nearby and I’ll try and visit later today. See if he has young white asparagus. It’s one of my favourite European vegetables!
