I’ve been waiting for this to happen. DOH has made it impossible for restaurants serving proper sushi to get an A. Seems like a losing battle for chefs and that’s a shame.
That’s unfortunate. I went on a trip to Manhattan a few months ago and omakase at Sushi Dojo was one of my favorite dinners there. We had a similar law go into effect requiring gloves here in California last year but it was repealed right before health agencies were to start enforcing it.
