I was frying up some local bacon today
Not slimy, from an unopened package from a reputable shop.
I picked up on a very slight ammonia odor and decided to Google.
Have you experienced Boar Taint?
I have always thought the ammonia I pick up with some bacon or pork was bad meat due to spoilage, and it can be.
There’s also a scent with products made from male pigs and boars that have not been castrated.
I don’t know if my bacon today is just slightly spoiled, on the edge of being spoiled, or whether I am picking up on something else.
Apparently women pick up on the ammonia smell a little more often than men, according to an egullet thread.
This is the second time in 3 months that some bacon that has been new, from a smaller producer , had not had any sign of bacteria, has given off a slight ammonia odor while being fried.
If the bacon stinks before I fry it, I throw it out.
