@BierMonk got it right - it was a dollop of thickened, sweet coconut cream.
Singaporean-Tamils, and their Malaysian-Tamil cousins, in general, do not have appams with a coddled egg in the middle. Only Singaporeans or Malaysians of Sri Lankan descent here prepare their egg appams that way.
