[Singapore] Modern-Chinese at STRAY by Fatcat

STRAY by Fatcat started off in Bedok on the Eastern part of Singapore nearly 3 years ago as an ice-cream bar. This year, it made a foray into the heart of the retail district with this nifty outlet at Orchard Central mall.

Had a quick lunch there today which consisted of:

  1. Keep Popping Spheres - these are 3 Ferran Adria-style molecular spheres which came in the respectives flavours of: lime-rum-Osmanthus, lychee-rose-lime and mandarin-Shiraz-lemon.

  2. Heavenly Pills - which are 5 types of “dim sum”, served cold in a dim sum basket with dry ice effect to simulate ‘steam’. The dim sum morsels are a mix of molecular spheres and frozen spheres are each uniquely labelled and come with their own respective dominant flavour: Acid (lime-flavoured), Frozen (beetroot), Sweet (kaya), Dry (Sauvignon Blanc) and Rich (foie gras).

  1. Instead of a soup, it was a Tom Yum Margarita, garnished with a kaffir lime leaf.

STRAY by Fatcat gets to be very busy during peak meal-times, so try and get there a bit early.
