Old style Shanghainese dinner with my Shanghai root stock uncle-in-law doing the ordering. He chose his favorites.

Shanghai Light Stir Fry Shrimp

”Preserved” Duck in Sauce
Duck is cured, steamed then sauced.

Smoked Fish Shanghainese
“Smoked” is the menu description. More like deep fried.

Tofu with Crab Roe and Crab Butter
‘Tis the season

Dau Miu (pea sprouts)
Young and tender. Chef had a light hand with soy and flavoring. Tad heavy with the oil, Shanghai style.

Old Vinegar Jellyfish Head
Quite good. Snappy.

Braised Wheat Gluten
Wood Ear and Peanuts

A simple comfortable meal in Shanghai.

Traditionally features Winter Bamboo as an ingredient. Must have cheaped out and subbed peanuts. :wink:

I was just thinking of you, because I found poached bamboo shoots (without any preservatives) at the market the other day and picked up a packet to try!

From a brief Google, seems the smoked fish is not smoked at all. Deep fried to a dark brown, then metaphorically offered as smoked.

We had hit up a stall in a day market in Hangzhou on more than one occasion, specifically for the fish at a famous Fried Fish stand.

Burning hot, crisp and Smokey seconds out of the fryer. So good. No sauce needed or wanted.
