Although it’s now many years since I was in the Carolinas, I remember eating some fantastic BBQ piggy. Love the vinegary sauce in NC - although not as much as the mustardy sauce in SC.

My only addition, from personal experience, would be Woodlands BBQ at Blowing Rock.

There was a place nearby that had NC style pulled pork with the vinegar sauce. I don’t usually like vinegar that much, but this was delicious. They closed a couple of years ago.

Ate at all those places on a weekend long bbq run with a local friend about ten years ago. Next day I had my very first heartburn and was convinced I was having a heart attack. He chuckled and went and got me some Tums.
