Did you return it to a full simmer after adding the Curry Roux? If not that would explain it not thickening up enough.
I usually have the opposite Problem and need to add some water to thin it

It was thicker the second night we had it. We’re looking forward to having it again in the next few weeks. Thanks for your help.

Of course.
We almost always have a couple of smaller Veg or Protein Dishes with this.
Spinach Ohitashi
Steamed Kabocha
Cucumber Salad/Pickle
Steamed Broccoli with Sesame
Tamagoyaki
Bean Sprout Salad
Etc…
