If the rice noodles stick to the ceiling, they’re cooked.

My favorite prep of rice noodles. Vermicelli is easier, but wider ones work too. The trickiest thing about rice noodles is they like to stick together, which means hard pieces if you stir fry or wok them and aren’t super careful to separate. I also love them in Thai dishes - pad thai, pad see ew…

Try soaking them in water first.
Doesn’t need to be hot and doesn’t take long. Maybe 30-40 minutes. Just till they are soft

I do. The wider ones still need to be separated by hand often.
