Project Cooking: Fancy Dinner for 18

This all sounds so fantastic, and fantastically well-planned! Good luck and I hope you get to enjoy the meal, too. Every time I cook this much, I am not hungry when the food is ready.

Alright, it’s 9:30 pm. All the groceries have been procured and organized, logistics for tomorrow discussed, and anxiety about weather ratcheted up. I made the basil whipped ricotta and my brother prepped his grilling station and the nearby outdoor fireplace, which he’s going to need to stay warm tomorrow. Charc boards and serving ware have been selected.

I’ve written and rewritten my schedule for the day several times. I decided not to bake the pastis tonight, but will do it in the morning. Then I’ll make the chocolate mousse and start roasting and prepping veg.

Guests arrive at 530 for nibbles, dinner at 630. I’ll immediately prep the dessert station, then start packing out my car so I can get on the road for the 50-ish min highway sprint home before it starts snowing (and before I keel over from exhaustion.)

Fennel seed? Dried parsley if you have any? Sun-dried tomatoes? Pickled pepper of some kind. Cracked peppercorn.

9:19. Oven preheated, coffee consumed, mozzarella marinated.

Next: apple tart.

11:59 - Apple bake is done; fennel is in to roast.

Made the dressing for the fennel-citrus salad, now moving on to finishing the mousse.

Once they are in, I will set up the kale chopping station for my brother, and I’ll hit the shower.
