I had some “Hurricane Fries” recently in the US (Hawaii) that were really good. A mess of fries with drizzles of both sriracha aioli and teriyaki like sauce, topped with furikake. Sriracha ketchup on the side for dipping.

They were very good, I think the key is to use a restrained hand on the aioli and teriyaki sauce, which they did.

Furikake also requires a restrained hand. It can go from punching things up to punching them out in a snap.

This is the Poutine Benny at Boom, 2 fried eggs over easy, caramelized onions, fresh tomatoes, and chopped bacon on potato wedges topped with Hollandaise.

It is topped with typical diner Hollandaise, from a powder. (I expected that!)

I might recreate something like it at home some time with home fries and Hollandaise from scratch.

I haven’t spent any time in South America or Latin America. It turns out that there are variations on salchipapas in most Latin American and South America countries, in addition to Cuba and other islands.

I love finding a new food to seek out!
