Potatoes, peeled or not?

And to me the leftover skin on a baked potato is the best part. Still has some potato flesh lining it.

All in all, I usually don’t peel potatoes, but there are a couple of dishes I make (with potatoes) where I need to peel them. I can’t bring myself to throw the peels away, and I stumbled across this solution on youtube.
Before peeling the potatoes, I give them a good scrubbing with a vegetable brush and save the peels. The next day I make these “Crispy fried oven potato skins” for my girlfriend & I
 We both enjoy them as a snack. (Glen and friends cooking - recipe attached)

 luv crispy potato skins, and serve my twice baked potatoes, mash, and even salad in them.
