Please throw me your best chocolate chip cookie recipe

Try Chips Ahoy some time.

Entenmann’s makes chocolate chip cookies.

And more walnuts. Always more walnuts.

I have.

I enjoyed them, especially as a trifle layer or on top of ice cream.

Indeed they do.

They’re usually stale whenever I find them around the office. I crush them and make crumbs out of them and use them as “batter” for deep fried ice cream.

Pepperidge Farm (especially Sausalito with macadamia) warmed in the microwave for about 10 seconds.

I guess you are right. You would consider no chocolate chip cookie bad.

They don’t help with those jonesing for a chocolate chip cookie. 3/10 for a chocolate chip cookie

How is the process coming?

I am going out today for more supplies! Probably make a third batch tomorrow.

My first job was for Mrs Field’s Cookies! We got a huge bag of premix and then made the cookies. I ate so much dough and loved bringing home leftover cookies. 1986!

Attempt #4 Christina Tosi

@a_m got in my head about my oven temperature maybe being too high, impeding the spread of the cookies. So I checked, and yes! about 20 degrees hotter than I set it for. I tried to compensate, but I may have overshot.

Because these spread a little too much! I made a couple of adjustments - cream powder (which I had on hand) instead of milk powder (which I could not find in any of the five places I visited yesterday). About 3/4 the amount of chips called for (I ran out), which I think was plenty. The bake time was much longer than the recipe stipulated, mostly likely because of the lower oven temperature. These had a very good flavor and texture - the best so far. But they are huge. I would continue to fuss with the temperature and bake time, and also halve the size of the cookies.

Two references that might be of interest (I am also on an ideal ccc recipe quest, for my nephew), with troubleshooting tips:

  • The person credited with popularizing “scooting” cookies out of the oven, for optimal shape (and possibly texture gradient):

  • The person credited with popularizing “pan-banging” cookies :

Attempt #4: Doubletree

Another superspreader event! Cinnamon & lemon added a little something, and my final batch will probably include them, but these spread way too much, and the oven temperature was spot on. I did too much adjustment on this one – cutting the oats, reducing the sugar. But these are an also-ran.

Cinnamon and lemon don’t break the ‘classic’ requirement?

They probably do. But maybe in a microdose….
