[Phuket, Thailand] Lunch at Hideaway by Jampa

Lunch at the much talked-about Hideaway by Jampa, a MICHELIN Green Star recipient for its commitment to zero-waste, sustainable farm-to-table sourcing of ingredients. Housed in a rustic-looking structure perched on the lakeside of PRU Jampa Organic Farm, the farmlands around it provide much of the ingredients used here.

The young 31-year-old owner-chef, Einhoven-born Rick Dingen, brings his experience at similar set-ups - De Kas (Amsterdam) and Haoma [Bangkok) to Phuket.

Our lunch menu degustation started off with a beautifully put-together trio of “snacks”, startlingly beautiful amuse-geule constructs.

Flambadou Surat Thani Mussel | Pickled Strawberry | Lardo

Tartelette | Sweet Corn | Harissa

Flaxseed | Garden Pea | Farm Herbs

STARTERS
River Prawn | Pomelo | Sweet Potato - served sashimi-style in a floral bouquet full of fresh flavors.

Cobia | Gooseberry | Nasturtium - cod-like, firm-fleshed white fish, served simply pan-fried. Again, very beautifully presented.

Farm Egg | Sunchoke | Mushroom XO

MAINS
Free Range Chicken | Eggplant | Young Leek

Cabbage | Sesame | Hollandaisse Sauce

DESSERTS
Guava | Citrus | Laksa Leaf

Wild Rice | Rose Apple | Stingless Bee Honey

Beautifully-plated dishes, idyllic setting/ambience, and a very pleasant dining experience overall, although not one I’d have come all the way to Phuket for. Still, it’s a nice break away from the usual Southern Thai, seafood or street food one comes here for.

What a lovely setting, and everything so beautifully plated.

I’m not into edible flowers, but they look very pretty!

I’m guessing that the trend was popularised by René Redzepi’s Noma when it was feted as the “Best Restaurant in the World” back in 2011-2014. They adorn their food with tiny flowers, which soon became de rigeur the world over, replacing the El Bulli-style “let’s turn everything into foam-you-can-eat” in the 2005-2010 era.

Eleven Madison Park and some others had them probably pre Noma, but I’m not big on biting into petals.

On a lighter note, did you see Monsoon Wedding? The guy chomps into a marigold while off in his thoughts about his lady love :smile: – 1:24, but the song is a lovely old one.

And the character is one of the best in the film (the actor is now very established, but was pretty new back then)

Oh yes, a classic. I remembered in Singapore, it was premiered at the Singapore International Film Festival for that year and most of us in the audience went in Indian costumes, as if we are taking part in an Indian wedding. :joy:

When I see photos of those open-air restaurants in southeast Asia, I wonder about mosquitoes and other insect pests. How do they deal with them?

I was wondering the same about this place, which was why we did lunch here. Mosquitos usually appear during dawn and dusk.
