Lunch at the much talked-about Hideaway by Jampa, a MICHELIN Green Star recipient for its commitment to zero-waste, sustainable farm-to-table sourcing of ingredients. Housed in a rustic-looking structure perched on the lakeside of PRU Jampa Organic Farm, the farmlands around it provide much of the ingredients used here.
The young 31-year-old owner-chef, Einhoven-born Rick Dingen, brings his experience at similar set-ups - De Kas (Amsterdam) and Haoma [Bangkok) to Phuket.
Our lunch menu degustation started off with a beautifully put-together trio of “snacks”, startlingly beautiful amuse-geule constructs.

River Prawn | Pomelo | Sweet Potato - served sashimi-style in a floral bouquet full of fresh flavors.
Cobia | Gooseberry | Nasturtium - cod-like, firm-fleshed white fish, served simply pan-fried. Again, very beautifully presented.

Beautifully-plated dishes, idyllic setting/ambience, and a very pleasant dining experience overall, although not one I’d have come all the way to Phuket for. Still, it’s a nice break away from the usual Southern Thai, seafood or street food one comes here for.
