With apple Tarte Tatin I use a variation of a Roux Brothers recipe:
I don’t first make caramel with sugar and water and then put in the apples. Instead, I melt the butter in the pan, spread sugar all over, then put in the apples. This way the juices from the apples caramelize with the sugar. It results in the apples collapsing completely, but that’s the way I like it. Here’s a picture of the last remaining piece of one I made:
I used to make it in a large, heavy copper pan, but always worried that I would end up with caramel burns, so I bought an Emile Henry TT pan, which I have yet to use.
I have an EH tart tatin pan. Mine has a hot spot and the burn was very hard to clean. Now i do as much as i can in a stainless steel and then assemble it in the pan. Its annoying because it was expensive.

I worked with a guy who said he was on the British swim team at the Montreal Olympics, and he told me that he once took on a steak-eating challenge……a 112oz steak (that’s a 7lb roast) somewhere in the U.S. I was skeptical, but let it ride. Would it be possible to eat that much?
On one occasion I worked with him for a week in his Toronto office, and on the Friday we went out for dim sum. We only stopped eating because we had to get back to work. He had a huge appetite, but I was the skinny guy who could match him, dumpling for dumpling!

I used to watch the American show where the guy did food challenges each time. BIg things. Lots of things. Very, very hot things. Not my choice of how to make a living.
Yeah, I watched that, too. Man vs. Food. The dude seemed like a nice guy, and I still remember one time when he ate something so hot (a daal in NYC mabez?) I thought he might have a heart attack.
My introduction to competitive eating was the aptly named “Glutton Bowl,” which was on probably the first month I immigrated to this lovely country.
Several rounds involving mayonnaise, sticks of butter, gigantic sushi rolls, beef tongue, and other sundry items. Kinda made us lose our appetite — we were watching it with dinner
