A friend of mine informed me of Pableaux Johnson’s death. She was fortunate to have known him. I wasn’t familiar with him but I found his red beans and rice recipe languishing in my NYT recipe box. I’ll make a veggie version soon.
Helen Rosner wrote a wonderful tribute to him. What a life he led.
Mr. Johnson sounds like a wonderful human who will be greatly missed. I love this quote from the Nola.com article:
