A cream puff is pate au choux filled with whipped cream. An eclair is pate au choux filled with custard and topped with chocolate. The Beard Papa cream puffs are filled with custard mixed with whipped cream as opposed to whipped cream only. They make a hybrid cream, so both the cream puffs and the eclairs have a hybrid filling.
We have a lot of Asian bakeries in our area and many of them do eclairs similar to the Beard Papa filling style. I’m guessing it’s more Asian style as opposed to the traditional French style. It’s better than the donut shops selling cream filled yeast donuts and calling them eclairs!
