I’m happy to eat at a stationary restaurant that is next to a river or other body of water but the idea of a boat on a canal just doesn’t appeal. Stinky is the first thing that comes to mind.

This is a good example of the level of ignorance you may be facing, at least if I am typical. If I were to see this menu, I might think, “Hey, this might be worth a try, it sounds good!” But if I’m given a choice of where to dine, as in, “What do you want, Mexican, Chinese, Italian, Korean, Jewish…yada yada yada…,” I’m not likely to pick Jewish because I wouldn’t think of your sample menu. It’s all on me and a product of my ignorance, but it’s a challenge for you as the restaurateur to get me even to consider your joint.
As for the discussion down-thread about non-dairy desserts, my body would tell me if the ‘ice cream’ was made with fake “whipping cream” (eg Cool Whip) in about 20 minutes. Violently. Explosively. Disgustingly.
