Love this idea. I live in a rich tourist town with some very poor, old, and sick locals for flavor. Perhaps this is a model to follow.
Similar concept but closer to home was started by rock star Bon Jovi, I live very close to the Red Bank, NJ location. Primary function those who can pay do, whatever they feel is appropriate there are no prices on the menu. Those who can’t pay still eat and can work off in trade what they ate or just leave. It’s up to each individual what they chose to pay in return for their meal. It’s been going on about 5 years so I guess it’s a working model.
