National Taco Day

In observance of National Taco Day (which is either today or was last Saturday, depending on your source), I made a couple of chicken tacos for Mrs. ricepad and me for lunch today. We had just enough leftover chicken for two tacos, so I shredded some cabbage, warmed up some torts, and we each had one, topped by my homemade (Bandito) salsa. They were so good that I decided to make another, but since I used up the last of the chicken, I decided to try a pastrami taco (I have a small slab of homemade pastrami in the fridge I’ve been trying to finish for the last week or so). When I asked Mrs. ricepad if she wanted one, she said, "Hmm…that sounds interesting, but apparently not interesting enough for her to want one. It was good, but it’s hard to go wrong with pastrami in almost any application.

What are YOU doing for National Taco Day? You could go the easy route, and hit up Taco Bell for $1 tacos (probably need an app for that), or you can whip up something at home.

I was not aware of National Taco Day (last Saturday nor today), so unfortunately will have to delay any celebration of this annual milestone, as we’ve already made dinner plans :slight_smile:

We are def due for tacos at home again soon, so thanks for the inspiration!

Well, we missed it by a day, having had tacos for dinner last night. My contribution to the discussion is a tip I picked up from America’s Test Kitchen newsletter this week.

Often I’ll saute up some onions and ground meat, and then add a homemade seasoning mix and splash of water. Cooked until the liquid is mostly absorbed, the mix is used to fill the tacos. There is always a bit of liquid left in the pan, however, which can result in tacos with soggy bottoms. :astonished_face:

ATK suggested adding small diced potatoes (in my case - par cooked) to the mix. The spuds absorb the additional liquid. Voila! Tasty, filling, and no soggy bottoms. :face_savoring_food:

Even better if they crisp up a bit.

I ordered Taiwanese fried vermicelli and Buddha’s Delight 14 minutes before I found out it was National Taco Day.

I will make up for missing National Taco Day.
