Everything and anything at Trippa, and do any tripe dish thrice.
Anything shellfish and/or cephalopod at Da Giacomo.

Any recommendations for the country side area near Milan?

not sure what you mean by countryside area. Here was a post I made about a country resto a short drive from Malpensa. which was very good. Falling Harder for Piedmont - #60 by JenKalb
The region south of Milan grows rice and there are also many traditional food specialties involving courtyard animals (ducks etc) Ive wanted to explore. North and you are going toward the lakes, there are a lot of options depending upon how you intend to travel and what you really mean about country.
Slowfood has many fine recommendations for true country regional restos and I recommend their app.
Its also a short train ride to Pavia, Bergamo and other possible day trip destinations that are less intense. Love to hear what you turn up!
@JenKalb thanks for these recommendations we are planning to drive from MXP to lugano and also from lugano back to milan so I was looking for places that might fit the bill in the area. I will check out the slowfood app!
I find that usually michelin recs don’t usually fit my own personal style and tastes in terms of food.
