I’m fairly sure it’s Savel from the quesería Airas Moniz, since it’s the most “famous” and has won many awards.
Finally, the photos, but its hard to read the label and I can’t find the marca; most of the ones I bought were wrapped as one unit, but this one the vendor cut from a long cylinder:

I want to update this with a list of favorite Madrid bars from Carlos Maribona, the respected Spanish gastronomic critic:
As you know, erica, the number one barra on his list is the one owned by my chef friend Miguel Ángel Jiménez, who has topped the list for several years running. His LA Catapa, with one Repsol sun, has been a regular on our rotation for almost 20 years in both locations.
I have only 2 on his list yet to explore. I know Maribona , have had the privilege of sitting next to him at SS Gastronomika and Madrid Fusión and have been following his tips for years on his blog , Salsa de Chiles, Instagram and his reviews for 7 Caníbales and the gastro section of ABC.es. His recommendations never fail me.
As you will notice many on his yearly list are found in the food rich Retiro district, within mere blocks of each other. This district is where we regularly choose to do our evening dining and where dining offers the best RCP (price to quality ratio), ime, in this city.
