LOW COUNTRY - Fall 2024 (Oct-Dec) Cuisine of the Quarter

A riff on shrimp and grits. Broil and blacken halved Campari tomatoes and red bell pepper strips on a sheet pan. Cover with a like sized sheet pan to sweat them. Pluck off the skins. Mince shallot. Cook black pepper bacon and then cut into lardons. Sweat minced shallot in the bacon fat. Toss in the tomatoes, peppers, shrimp, and bacon. Douse with Champagne and sprinkle with a very little Wondra to tighten the sauce. Serve with goat cheese grits and an arugula salad. Champagne is already open, so what the heck.
