I really enjoyed David Chang’s Ugly Delicious except the BBQ episode where he was comparing BBQ to Korean BBQ, which is really grilling. He did later on use the Korean flavors in a low and slow cook, but failed to adhere to my pet peeve and clearly make a distinction between the two cooking methods.

This rant may or may not be over.

Alright, I need educating. Is bbq smoking? Pit-cooking? Or is it defined by the sauce???

Time and temp. Low and slow is considered BBQ while hot and fast is grilling. You BBQ a brisket and you grill a burger.

Direct heat vs. indirect, the exception being Santa Maria style.
But all bets are off in this new age.

It can get even more confusing as at BBQ comps you have people that do low and slow brisket and others hot and fast. Of course it’s all relative and these are just general terms so we can yak about this stuff. But it’s safe to say what most people do in the backyard is grilling not BBQ.
