Michelin-starred Japanese-American chef, Jeff Ramsey serves up some stupendous fusion Spanish-accented Japanese sushi (which he termed ‘Japas’) at Sushi Babe, KLCC.

Preserved ginger is thinly-sliced & folded into origami cranes here.

Jeff Ramsey explained that it took him 4 years of experimentation before he perfected his recipe for the sweet dashimaki tamago which I thought tasted akin to the one at Sukiyabashi Jiro in Tokyo.

I don’t have the accurate details of each dish as the omakase changes each day according to what the chef wanted to cook. But we’ve emailed them asking for that night’s menu of dishes served to us.
