Tried two types of ramen here at a place that makes their own noodles daily. Kaiju means monster, so there is a hipster comic book theme to the vibe and menu selections.
Despite the theme, there is something serious going on here. The black miso cheese ramen with squid ink, scallion, black sesame seeds, wood ear mushrooms, minced pork, parmesan, and egg has a deep flavor and the noodles were wonderfully chewy. It’s great when a ramen place gets the noodles right. It doesn’t always work out that way.
The other attempt was unsuccessful. I don’t understand why any place would go to the laborious process cooking down pork bones into a delicate tonkotsu base and then adding a spice paste to it. I know there is a way to do it, but even then the spices have to be delicate enough to let the tonkotsu shine through. This spicy tonkotsu ramen wasn’t it. It was irritating.
