I keep forgetting about this thread, though soup is What’s for Dinner ‘round here, often.
Red Lentil Soup (gift link) from the NYT. I decrease the lemon juice a bit and use the Better Than Bouillon No Chicken Chicken base.
Zuppa Toscana from BudgetBytes. I dice the potatoes, occasionally add or substitute in some cauliflower, use oat milk or evaporated milk (depending on who’s going to be eating it), and Field Roast Italian sausages. Fairly certain I followed a link from HO, originally.
(Haven’t made but one of my favorite soups in general!)
