Indonesia is home to a bewildering cornucopia of cuisines and spices. One of the all time favorites across this vast archipelago is a humble little white fish, the ikan bilis. This little fish is caught with huge floating traps, sun dried and then deep fried into a crispy salty little bite that goes amazingly well with beer and as an add on to rice dishes.
