Having lived in Jakarta and spent some months in Makassar and Menado (the two population centers on the island), it’s great to see dishes like coto on menus in the U.S. if I never eat at another Javanese restaurant again (too sweet and a lot of fried foods) I wouldn’t miss it but I really enjoy the cuisines of other cultures and islands.
Seems like a lot of pork which is not that common in Makassar but the chefs behind the restaurant are Indonesian-Chinese which is a small but important community there. The offerings seem to miss the great simply grilled seafood dishes accompanied by a wide range of sambals, many unique to Sulawesi but I expect that has more to do with the quality and price of seafood available in the U.S.
