We used to have a GREAT take & bake pizza/sandwich shop here that did great sweet/spicy pizzas with pulled pork, BBQ chicken, pineapple, peppers, etc. These days I can not find a worthy substitute.
A recently watched episode of Pati’s Mexican Table (S11 E5 • The Magic of Piloncillo) shows making one that looks fabulous! While I am not sure I’d spend the 5 hours she did on the pork, I wanted to share it for folks who might. OMG!
