I always enjoy a good read about copper pots. And this review by Kaleo was entertaining; including the manner that he found to set the lid on the rim, particularly ‘locking’ it on the handle to use as a spoon rest. That’s brilliant, in the fact that it looks good and stable, and is often a needed function to have a partial lid. So I loved it.
Also clever was the concept of using this pot as a sort of short term veggie compost container, that 2 or 3 days later, you just add water to create a vegetable stock or broth. And it’s probably small enough to keep in the fridge if necessary. Although things like bits of carrot, onion, and potato skins may not degrade in a few days.
I applaud Kaleo for his liberal thinking about using thinner copper on some smaller pots and pans, to be noted this is a pan intended for liquids.
This is a praise worthy review, and as Andrew Marvell once coyly wrote, this pot ‘deserves no less’.
But at the back of my thoughts I hear the troubling YouTube videos of Sara’s own words about copper manufacturing that contain so much confusion and certainly some misinformation, that I would not rely upon her for any comprehensive information. This does not demean the pot, nor the craftsmen and women who made it. It’s just my quibble about accurate information. I will temper this by saying I prefer any information on the subject than none at all, as it adds to the thin reservoir of knowledge including half truths.
Particularly annoying is when she broaches a ‘scientific’ concept and then backs down before adequately explaining it. It’s as if the concept has not quite settled in her mind yet, so she laterally passes the fumbled idea into the air before being tackled. Yes Virginia, there is thermal expansion, but also, 304 stainless has almost the same thermal expansion numbers as copper (9.6 vs. 9.8). This fact would apply to both linings and rivets. Perhaps the hardness of the rivet material might be of some concern. And she has this smirk as if she knows what she’s talking about, but for a large part, she doesn’t. Not really.
Dare I go on? I will if I must to make my point. In the meantime, I offer two of her video’s.
