Holiday Leftovers 2025

Leftover turkey kindly gifted me by my Thanksgiving hostess on lightly toasted bakery cranberry orange sandwich bread with Dukes was by far the best turkey sandwich I’ve ever had. I used to be able to get hydroponic watercress at great expense - that would really have taken it over the top!!

Today’s lunch was Coronation Chicken, made with some of the T-Day chicken, diced. This also works using turkey. Recipe I use was previously posted here. I love the texture and temperature contrasts in the layers - crispy chlled lettuce/spinach mix, topped with warm grains of a scoop of rice, topped with the tender /smooth curry/mango/spiced chicken salad. We garnish with cashews for salt and more crunch.

TURKEY FRIED RICE

I know I said no more Thanksgiving leftovers but here we are! :joy:
We loved this and this will definitely go in our leftover rotation for next year! I had leftover white rice in the freezer, chopped up leftover dark and white meat, and threw in a random assortment of frozen veggies along with the eggs. A little extra soy sauce and some chili crisp topped it off. Dinner in 10 min!

Smoked turkey breast bounty from the freezer continues to feed us post-Thanksgiving. Frozen stock went into this caldo verde adjacent stew with kale, carrots, leeks, canned white beans, red pepper paste, thyme, and garlic. I cubed smoked turkey to add when the vegetables reached the desired tenderness.

Bread with olive oil and Maldon salt on the side. (Costco had the bucket o’ Maldon last time we went. We will be well-supplied with flaky salt for years.)

Pretty much the old standbys for me. Made white bean chili Friday after Thanksgiving, a few smallish turkey tetrazzini in foil pans last Sunday for us and for some others to bake at home (p.s. if you make this and traditionally use spaghetti, try linguine instead), and turkey pot pie last night (I’d made another turkey because CHEAP earlier last week and split it with my oldest daughter’s family).

Sandwiches or just eating the turkey and what not in between. Luckily I love turkey dark, and my wife is pretty fond of the white, so we managed to get through most of our half of that 2nd turkey pretty quickly.

Leftovers from that smoked turkey breast from Thanksgiving, pulled from the freezer, are still feeding us. I made us taco plates with a hash of roasted, cubed sweet potato and smoked turkey, amped up with a spice blend (this Baja spice mix) and olive oil. Garnishes included fresh homemade salsa, spicy refried-style black beans from a can, shredded lettuce, a little grated cheddar and labne (subbing in for sour cream). Packaged tortillas on the side quickly warmed in a cast iron pan. No pic—busy day.

Husband and I have concluded that it’s smoked turkey for the win on future Thanksgivings, if the bird is part of the feast. Less fussing for me on the day and appealing possibilities with the leftovers.
