I would much rather consume beef from cows drinking beer than the skittles diet of US. cows.

If you joined Hitachino’s mail list, you will have just have received info on how and when to register online for a tasting menu table opening week. Since I assume it will be a scrum, I’m not going to tip you off. However, here’s their opening menu. The prix fixe of $68 (not including drinks) seems reasonable.
