You can velvet meat with baking soda, but it doesn’t take much. Maybe a heavy pinch or so should be enough. Rhoda also wrote a book on dim sum called “Dim Sum”. Her Chinese Village Cookbook and a community cookbook published by St. Marks United Methodist Church in Stockton are two of my most dog-eared cookbooks. A lot of contributors to the latter I also called “auntie”!

Yeah, just a pinch for velveting. I somehow, in making a double recipe, put too much bs instead of cornstarch in the marinade and it was horrid. Just totally disgusting. I won’t make that mistake this weekend!
My copy of her Chinese Village Cookbook is so well loved, food stained and dog eared to death. My mother gave it to me when it first came out.
