Great dinner at Copper Beech Inn, Ivoryton, CT...

It’s nestled in the Connecticut River Valley area that includes picturesque towns like Essex and Old Saybook. We finally had a chance to fulfill a birthday gift card to the Copper Beech Inn and it was a most pleasant overnighter. After a walk thru Essex and stops in a few of the surrounding towns, including a visit to The Kate (Hepburn) Theater in Old Saybook, we got back and joined the friendly crowd at the Copper Beach happy hour. Great deals on drinks and snacks. You could do a full meal easily, but we opted for a more formal dinner in the dining room/patio/garden area. It was a beautiful evening for our orders of classic lettuce wedge salad, and loaded French onion soup (with a surprise of short rib raviolis in the bowl). My companion’s sea scallops were caramelized to a turn and sat on a delicious bed of seafood risotto. I wanted to bite into their veal loin chop bone-in and it was tender and flavorful as could be. No wine, but decided to have a couple of local Thimble Island IPA brews instead. So lovely, so good!
