I did make Goan chorizo years ago…
Not sure how authentic, but it sure was very nice
But now to find my recipe…

Try the recipe for sorpatel, a famous Goan dish. It’s a lot of work as the ingredients have to be finely diced.

And no, I don’t make Goan food as my stomach can’t take any food where the recipe calls for a truckload of chillies.
