Cauliflower with “Mac & Cheese” sauce
Carrots mashed with butter and honey
Steamed green peas or steamed broccoli pieces
OLD FASHIONED BROWN BEEF GRAVY ( no butter, bacon, nutin’)

Southwestern chicken breast diced
Avocado
Green onions
Diced tomatoes
Cilantro
Broccoli florets
Bacon
Maybe ranch dressing?
All great ideas to simplify things, I would add leftovers.
So stroganoff, chili, ground beef patty with cheese and onion,
Roast chicken with avocado onion and tomato or even a poutine type baked potato,
Any chicken dish in a sauce etc.
Or go ethnic and add some of your favourites because the combo is already made up for you so it takes the guess work out of it.
There is a place in Austin near UT called Bert’s, and they do (or did) a giant, load baked potato with butter, sour cream, chives, cheese, bacon, and a pile of pretty darned good chopped brisket. They called it the T Man. The slogan among the UT students that frequented the place was “Bert’s 'til it hurts.”
At the other end of the Texas spectrum, a lot of dieters just use salsa or pickled, sliced jalapeños.
PersonallyI go for a salted and crisped skin and the potato buttered, salted, and peppered, but I loved the approach of @Olunia.
