Best to slit their gills right away; then, a bonk on the head.
Back in my riding days, we once took a field trip to a trout farm (it was for dinner). The trout were killed by being smacked on the head, but of course some would still be moving while the guy degutted them. Painful to watch, but hard to say whether that was just a reflex or they were actually still alive.
Ugh. If I had to kill the animals I eat I would be a vegetarian. 100%.

Not a real thrill for me, either. Fish are one thing, killing a lamb is another. Freakiest one for me is snapping turtle. You cut that head off and it keeps snapping for a day or two. Uff!
