I’m learning bennies are the new omelet/frittata - they absorb all types of scraps and leftovers well.

After @MunchkinRedux glamorous EB mine look plain Jane. Tasted good though. Toasted Em, Easter ham, Knorr hollandaise. I’m one of the inept poachers. I cook the egg in butter in an egg ring until 75% done, then add a splash of water and steam.

I like to dupe Scrambler Marie’s or just Scramblers now, Harvest Benedict. Toasted and buttered whole wheat English muffin with sauteed spinach, mushroom, tomato, and garlic, poached eggs and hollandaise, parsley and a touch of cayenne, a la Chef John.
