His new book is great. Some old recipes available on the web and some new ones. Lot’s of detail about science and technique per usual. I originally ordered the book as it was the very least I could do for all the free content and recpies of Kenji’s that I have used. Now that I have leafed through the book, it will clearly be will be one of my most used books. I highly recommend it.
