Beautiful review that doesn’t dodge a single thing. Thanks for sharing.

That was interesting and I agree that the rest of staff shouldn’t suffer for the chef’s sins. Not my palate but I understand how unique and original it all sounds. Did they ever open up a lower priced alternative in Copenhagen? Lots of Michelin star restaurants seem to do that now.

Sigh. I would have loved that meal.

Funny, I had the opposite reaction. Not that surprising. I look forward to a time when the word Noma is once again not used very frequently.

Me, too, but the food looks good to me.

I don’t know, lots of words justifying a bully and an assaulter who would have been arrested at many workplaces for his actions. CĂ©sar ChĂĄvez was idolized and a hero until he wasn’t. And talking about employees having a fistfight at a taqueria doesn’t seem very analogous. I hope the restaurant (is it a restaurant still?) can continue onward and the employees who have worked hard can move forward.

Yeah
that and the Sietsema article which seemed to cruise right past the issues that the institution is built on exploitation and abuse and act like it was an inconvenient distraction from the food. Meh
I think human rights are way more important and not a sideshow to the so-called ‘art’. Maybe it’s easy to say since I just find this food so uninteresting.

That tends to be the problem with heroes in general.

I’m from the NEVER meet your heroes camp, or just don’t have heroes. Look up to and respect but never heroes. Humanity has a way of disappointing that can never be underestimated. I have great respect for the changes brought about by Chavez and UFW
but somethings can not be forgiven.

Maybe hero was the wrong word, Chávez was an extremely important historical figure who fought for a group that had no power and helped changed their lives for the better. He has schools and streets and parks all over Calif and the southwest named for him and within days it all collapsed (rightly so). I have no patience for the “oh but he’s such an innovative chef” people. Go away like Mario B did and let the restaurant move forward without you. Hopefully this will happen.

They should’ve just named it “Farmworkers Day” from the get-go.

Big push to rename some of the places to Dolores Huerta street or park. I’m fine with that. I do think there are heroes in this world and if a Hispanic child can look up to a Dolores Huerta or an African American boy or girl can look up to the Obama’s then I’m all in.

I agree. Worker treatment seemed like a true afterthought in the final sentence. And don’t get me wrong, I even like Sietsema. But I don’t think he gave the ethics much thought.
